Easy Chicken Salad
What to do with a leg of cold chicken from last Sunday? Make a yummy seasonal chicken salad! Simply remove the meat from the bone and cut into bite-size pieces, then toss with the following:

Mmm I love chicken salad! You have inspired me! It's also good with dried cranberries, although that is not exactly seasonal.
ReplyDeleteyum! mike loves chicken salad, though i am not a huge fan. i love this one that has green grapes in it. though, those are something that you do not often find at the farmer's market. hey, hannah, that could be a good idea for a post. what if you crave something, like grapes, that are not exactly "seasonal" but you just gotta have 'em. i love your recipe posts, keep them coming!
ReplyDeleteI will definitely post about this -- great idea! Since no fruit is really in season yet I am seeing how creative I can get with what we do have: APPLES. So I just think, hmm which meals can I add apples to today? I'm finding they're surprisingly versatile and can go in everything from muffins & pancakes to salads & soups, plus they're great in oatmeal, or "fried" w/a little butter & cinnamon and served over yogurt! The possibilities are pretty endless.
